This is my first cast iron and expensive pan. Decided to buy this because I have heard good things about Le Creuset and also because I have recently bought and moved to a new apartment and needed a new pan (my old Silit pan has its coating chipped off after 4 years of light use). Another factor that I considered in making the investment in this pan is that I wanted to learn cooking on my own and start eating healthy for a change (I am a cooking novice and usually eat out or eat microwaved tv dinners.) This product arrived about a week ago. And wow! Amazing stuff! Steak cooked on this tastes so juicy and tender, it is like you have dined in a top restaurant; no joke, and I am just a cooking novice. Now I know why the heating surface (i.e., the pan) is a very big factor in cooking properly. Product wise, it is pretty much flawless worksmanship from Le Creuset. It comes nicely enameled in color on the outside surface (I picked the red one) and in black on the inside surface, so does not really need seasoning. But I note that the rim does not appear to be seasoned. Also, I have a quartz glass stove top in my new condo, and it scratches the bottom outer surface of the pan quite easily (when I moved the pan on the stove top sideways many times rapidly without thinking). Not major scratches but light scratch to the enamel paint. The enamel paint seems pretty thick, so I don't think the light scratches are anything to worry about -- but to be prudent, I seasoned the rim and also the bottom outer surface a handful of times in the oven. Now there is a nice coat of seasoning on the rim such that it is now water-proof; and the bottom outer surface is now protected by a seasoning coat as well. The black enamel on the inner surface is not non-stick like Teflon, so, I seasoned that as well in the oven a couple of times; and now it is quite non-stick (such that I can easily cook eggs sunny side up without sticking if I oil and heat the pan properly). Oh, almost forgot to mention -- I lost slightly over 2 kg in weight after eating in and cooking exclusively on this pan for just a week!!!!! My top purchase for 2017. Very highly recommended.

Our second "anniversary pan" continues to impress
My wife and I have two of the Le Creuset Signature pans - this nine inch version and the twelve inch iteration. We got the thirty centimeter pan for our first anniversary and the twenty three centimeter for our second. These pans are, without question, the best frying pans I have ever used. I first encountered them in the care of a roommate who was gifted two of them upon graduating culinary school. The special enamel coating is unlike any pan I have ever used: it is not a traditional "non-stick", nor is it a plain cast iron. It is a unique enamel formulation that, over a short period of time, acquires a patina which offers the best of both worlds. It imparts the kind of rich carmelization and browning you expect from well-seasoned cast iron, while also having outstanding non-stick qualities without any unusual chemicals (PTFE, etc.) being involved. Unlike traditional cast iron, the Signature pans do not require seasoning with oil and high heat, and can be washed with regular dish soap and scrubber sponges or the like. You can put them in the dishwasher, and you can use heavy scrub brushes on them, but both of these things will inhibit (or outright prevent) the development of the patina that enables the enamel finish to really function as intended. I recommend only hand washing, and only using soft nylon scrubber sponges at most. Fortunately, even high heat cooking rarely if ever sticks anything to this pan so badly that you can't clean it off with a sponge or, at worst, getting at it with a wooden spoon. To really make the pan shine - literally and figuratively - I recommend that after cleaning and drying it, you spray it with a light coating of neutral vegetable oil (soy or canola) and gently wipe it down with a paper towel to form a light shiny coat. Doing this every time will help develop the patina more quickly, and leaves the pan ready to fry the next time you reach for it. You don't need a lot of oil here - just a smidge. These pans are expensive, no question. They are also ridiculously durable and incredibly useful. They will probably end up in our will. We barely use any of our other pans anymore! They're that good.
