I'm really nervous about the pins on the back of the board getting shorted, is there a standard method for mounting the PSU in the case?

I used stand off screws to keep it away from the case's surface. Similar mounting method to the way mother board is installed.

Will using higher input voltage damage the power supply? i have a 19.5v ~6a power adapter from an old laptop. will this work?

It's not a good idea to use higher a higher voltage adapter unless it has some kind of auto- or manual-voltage adjustment on it. It will most likely damage or destroy the PSU.

What do I need to use this in a vehicle whåere voltage will exceed 12.8 when charging and could easily be lower than 11.4v when batteries get low?

A 12v buck converter is not that expensive and can be useful for any other devices you want to run in vehicle with stable power. Bucks drop high voltages to low ones. Boosts raise low voltages to high ones. Buck-boost regulators keep a constant output voltage. 12v is a common hardwired output voltage but you can also get adjustable ones. You'll want at least 20A to power this board.
