How have you restricted the rhizomes from spreading?

Root restriction is not needed with this variety, it is naturally densely clump forming rather than spreading.

Could these be put in a pond

I don't think so, perhaps at the periphery.

Can the tops of these be cut if they grow too tall?

Yes. This variety of bamboo if untrimmed grows up to 3 metres tall only. So it's not the tallest if bamboos anyway. But if you want them shorter, is very easy and once a cane has been trimmed down it won't grow higher.

Will one plant cover a 2m area

Bamboo grows once a year for a period of 3 months, if enough water and nutrients available. Bboo grows in most types of soil, but needs lots of water. So during hot or dry season make sure to water every two dry days. If in pots don't overeater or roots can rot. If planted directly on ground, just water when it doesn't rain. Ours (south London) grows every year gloriously. Is now a tall mature plant, of about 4 metres tall. We only water it on dry weather. It takes more care when is a new plant. The first 3 years are critical for establishment. We love our bamboo, it makes our small garden feel lush, bigger due to the tall vertical lines and the sound of the leaves in the wind is deliciously calming. Worth the wait!
