will a size 9 fit a xl hand?

Get a cloth tape measure.  Lay your hand flat on a table with fingers together.  Measure the circumference of your hand at the widest part excluding your thumb.  The number of inches will correspond to your glove size.  I measure 8 1/2 inches and the size 9 fits me perfectly.

Will these burn, catch ablaze, and/or transfer heat from a fire source or heat gun?

These are designed by dupont for fire resistance not fire proofing!!!  The leather can catch fire, the nomex is used to protect against eleectrical flash fires in aircraft.  There are  a couple of youtube vids of flame testing on  nomex gloves.  Hope this helps  be safe.

I’m looking for a glove to wear while hold and soldering metal jewelry together. Would these work?

Probably not.
Think of these as specialized driving gloves. I use them for Driving and Target Shooting but not any Automotive Mechanical Work. The Gripping Surface is too delicate.
The glove if made with two Nomex pieces, Back and Front of hand, and a Leather like material for the Palm and Finger Griping Surfaces. The three pieces are Sewn together in one operation so your entire Hand/Fingers is in a Nomex Glove and your Palm and Finger Griping surfaces are covered with the Leather like material. It may actually be Leather.
The Nomex is exposed on the Back of the Hand and sides of the Fingers to prevent a Flash Fire from burning the pilot's hands/fingers. The Leather like material provides Grip to the Pilot's controls, is Touch Screen Compatible and may possibly Melt if you Grip a Really Hot Surface or Item. 
I definitely would not recommend these gloves to hold a Hot metal item. I use 'Machanix Gloves', available on Amazon, when working on Low to Medium Hot metal items. They would probably work for you but may not have the desired dexterity.
