Everything stays cool without the water. You are not grinding or shaping the knives, you are simply sharpening and honing. I have one of these in my kitchen and it's a pleasure to use. **Q: How would the T2 compare to the Tormek T4 in terms of sharpening speed, and sharpening quality, if used for a small knife-sharpening side business?** A: Thanks for checking in. The T2 would work for you if you are intending to sharpen kitchen blades and not branch out into other edge - that is what it is designed for. It has the one diamond wheel in a 600 grit and you can add a 320 wheel for repair and reshaping edges more quickly. It has a 7 year warranty. You can use it to sharpen other types of edges as well it just won't work with the other Tormek jigs. The T4 is going to be more versatile as you can add their other jigs to expand out beyond kitchen blades. Tormek doesn't rate the T4 for continuous operation and they recommend 30 minutes on and 30 minutes off. Depending on how busy your side line is that might work. It has a 2 year warranty when used commercially. If your volume is heavier then the T8 may be the best choice. It is rated for continuous operation and has a 7 year warranty including commercial uses. I hope that helps. So generally speaking yes - this will allow you to set a new angle and to grind away damage in the blade. If you need to remove a lot of metal for the repair I'd suggest an alternate method to save the diamond surface on the T2. Also, if the blade is sharpened so that it no longer contacts the cutting board because the bolster is in the way - ie you need to grind away and reshape the bolster - then I wouldn't suggest using this to do that either.
