This is a great product! I was looking for something to thicken uncooked homemade salad dressings. Just a tiny bit (1/4 tsp.) does the trick: it is tasteless but thickens salad dressing to have a slightly more gelatinous consistency that sticks to lettuce and other vegetables, rather than running straight to the bottom of the bowl. While it starts to thicken within an hour, it will continue to set up over the course of a day, even when refrigerated. (I first didn't think it was going to work, so I added more fairly quickly -- that was a mistake! Allow a minimum of 24 hours before deciding whether to add more.) My husband likes vinaigrette but is leery of trying new things. However, I suggested we add a bit to his dressing, too, and he reluctantly agreed to try it. That night at dinner, without any further reminders or prompting, he immediately noticed how much better his dressing coated the lettuce leaves of his salad without changing the taste. He held up his salad bowl with amazement and glee to show me that, instead of a large puddle of wasted dressing at the bottom, his bowl was virtually clean! The package opens completely across the top, making it easy to dip in a measuring spoon, and reseals, making it very convenient to store. Although the price may seem high, since one uses such a small amount each time, it is really quite economical and will last a very long time. It arrived quickly and securely packaged from the seller. I am very satisfied.

Just do yourself a favor and buy this
After years of hearing about Xanthan gum I finally broke down and tried it. And honestly, I have no idea how I have ever survived without this stuff. First - a little goes a looooong way. This little pouch will last about a year, maybe a wee bit less if I go crazy with baking. I use this for baking, smoothies, gravy and stew thickening agent. And it is GREAT! No smell/no flavor just thickens without clumps or unnecessary gluten. I'll never go back. I even made a beloved frozen frappe for my husband and he loved it. Made it so smooth and creamy without added calories or ingredients. It's now a kitchen staple in our house.

Does what it’s meant to do!
We wanted to transition to a less carb heavy way of eating. After looking up some recipes I decided to give this a try to help thicken up foods. I first used this on a beef stew. I was scared to try this because I wasn’t sure how to use it. I Cooked my food and I slowly added some until I got to the desired thickness. It worked perfectly. It has zero taste and it does thicken up your liquids, it is a different texture than using cornstarch or premixed stew thickeners but it’s a good substitute. If you add too much, your food will become jelly like, so move slow. Add a little, mix, wait a minute to see how it thickens your sauce up and repeat as needed. But I do recommend this if you are needing something to thicken up your foods.

Good replacement for flour in gravy
I expected this to dissolve like flour when making gravy, and it doesn’t. It’s not an appetizing mixture. I needed four cups of beef broth, so I pulled a cup out to mix with the xanthan gum, and had to strain it once and try again. Add the gum very slowly and keep mixing to get it good enough to add to your stew or soup. Once I added it to the rest of the broth and turned up the heat, it looked better. It reheated nicely as well, but not a good consistency for eating it cold.
