This stuff is great! I made 4 creamy easily scoopable sorbets with this, everyone who ate them loved the texture it gave them. If, you’re worried about clumping mix the stabilizer into your sugar before blending into your desired sorbet base you’ll end up with zero clumps.

I added this at the recommended rate to my usual sorbet recipes in my Cuisinart ICE-30. The results were a smoother consistency and fewer/smaller ice crystals. I plan to use this in all my sorbets from now on.

This product requires a very specific method of use that isn't mentioned in the Amazon listing or the package directions. You must have a blender or immersion blender to incorporate it into the sorbet base. Otherwise it will simply clump as as goopy chunks and ruin your sorbet.This information is not available unless you go looking for it. Don't expect customer service to be concerned about this.

me first time trying stabilizers but in my opinion, this is a very nice one. my sorbet came out way creamier than it usually does without stabilizer
