Q: do these protect from blackberry and bougainvillea thorns?

These are good for blackberry thorns. Bougainville thorns get pretty big here in south Texas. I've used these while pruning these but I have had some punctures.

Q: There is no Medium, it just says Small, Large, X-Large, XX-Large, & "1-count". If I order "1-count" will Mediums show up?

I wouldn't count on it, see if you can buy a 3 pack in medium

Q: This gloves have warranty?, can I send back free if don't fit me?
