For powdered buttermilk, this product performs well. I use it in baking and its performance is just like real buttermilk. I am happy with the results!

A Great Substitute for Buttermilk in the Carton
I always hated buying a quart of buttermilk for a recipe, using 1 cup or less, and the rest going to waste as I didn't have any other use for it. Then, I found this buttermilk powder and it's changed my baking and cooking for the better! When used in cake batters, the recommendation is to measure the powder and add it directly to the dry ingredients and then add the liquid (you can use water or milk - I prefer milk) to the wet ingredients. It works EXACTLY the same as liquid buttermilk in recipes both in adding the acidic factor for leavening in cake and other baked goods, and adds the buttermilk flavor to other cooking products (i.e., buttermilk dressings, etc). As it is a dry good, it is shelf stable for months on end. I transfer the powder from the original container to 1 quart mason jars with tight sealing lids. This is a MUST for bakers and cooks who don't want to waste liquid buttermilk. A++++

Great Buttermilk Substitute!
As a passionate cook, Hoosier Hill Farm Buttermilk Powder has been a fantastic addition to my pantry. This high-quality powder is versatile and convenient. I can whip up delicious recipes without worrying about fresh buttermilk on hand. Iโm a senior citizen, and in earlier days, I could readily purchase fresh buttermilk from the grocery store. Today, that is not the case. So, because I like fluffy pancakes and savory cornbread for family gatherings, this buttermilk powder adds that perfect tangy flavor every time. It dissolves quickly and has a long shelf life. Whether Iโm experimenting in the kitchen or sharing recipes, this product has been a reliable and flavorful choice.

Very Good Product with Some Inherent Limitations
Hoosier Hill Farm Buttermilk Powder, 1 Pound is a great product if used in accordance with its inherent limitations. Advantages: It has two significant advantages over fresh buttermilk: (1) it doesn't go bad (for months after opened), and (2) one jar will last a long, long time so you need not worry about running out to make a special trip to the store. In other words, it is more convenient. In my original review I stated (as did other reviewers) that the printed directions on the label are only for making up a gallon at once. I (and they) was (were) mistaken. One SIDE of the [wrap around] FRONT label has the gallon-at-a-time instructions, but if you look at the BACK label they do have directions for making a single 8 ounce glass. One disadvantage is the consistency of the buttermilk made using this product -- it is watery (not at all creamy) and so does not result in the same fluffy pancakes as when using fresh buttermilk. In other words, using the reconstituted buttermilk powder results in very thin batter. The seller suggested making up the buttermilk the night before and keeping it in the fridge overnight; I have not tried this yet, mainly because I don't plan breakfast until morning -- breakfast being when I most often use buttermilk. However, I have added it dry (no extra liquid) to my pancake mix along with "regular" buttermilk, and it seems to make the pancakes fluffier.
