Q: Can this be used on stainless steel?

It’s basically a wax so I don’t see why not. It sticks to metal, plastic, just about anything. I used it on bath tub fixtures that I spray painted a dark bronze and used the gold wax to the trim to give it an antiqued brushed bronze look and that was a year ago. Not one bit of it has come off. Actually the hard part is not using to much. A tiny bit goes a long way.

Q: Would this work on gold plated chains that have tarnished? Or would it come off on skin even after dry?

It would probably wear off in time, I would suggest cleaning the chains with a metal cleaner.

Q: Which color is closest to a champagne brass ?

I ordered the Grecian gold. That might be too dark for what you are interested in. European gold might be close to champagne color? I suggest looking at each color by clicking on and scrolling thru to see what might be the closest match. I found that very useful.
