Sharp, well balanced, perfect for preparing Chinese food. It’s very easy to end up with too many knives so as a retired chef I have tried to minimise my knife collection. This cleaver is the final piece of my knife set. I now have a set of 6 knives that I can use to prepare anything I need to. This maker is a recent addition and their knives are very good value for money and sit very well alongside my other knives.

It’s absurdly sharp—so sharp that I’m pretty sure it sliced through time itself when I cut through a particularly stubborn bone. Questa grande mannaia del tipo usato nella cucina cinese è ottima per verdure di grandi dimensioni, e anche per tritare e sminuzzare, grazie alla lama estremamente affilata e molto sottile. il peso della mannaia la rende estremamente efficace e adatta anche a cibi più duri e complicati, mentre la sezione molto larga permette di affettare e usare la lama stessa come paletta per spostare il cibo. Menzione particolare per il packaking, in elegante scatola di cartone rigido con chiusura in velcro, interno in vellutino sintetico sagomato e con protezione lama sia agli angoli che anche per la lama stessa. Ottima anche la generosa impugnatura ergonomica, davvero un gran bel coltello cinese dai moltepici usi con un acciaio di ottima qualità

This knife has proven to be an excellent addition to the kitchen. I truly appreciate how effortlessly it slices through vegetables, meat, and fish.

The knife has a great weight and feel and the edge was quite good when received. I will have to see how it lasts over time and how it holds an edge, but for now it seems great.

刃が結構鋭利ですので、手指に当たらないよう気をつけてください、 押すだけでも切れますので力はそんなに要りません、すーっと切れます。骨と骨のつなぎ目に合わせて包丁を入れた後に、包丁の重みと反動を使って 切るようにすることで、簡単に切ることができました。とても頑丈で刃こぼれもせず使えていますので、十分満足しました。
