Does case have opening for spen?

Yes. But you can't get the s-pen out without bending the corner of the case, or using a tool. There's no access to the fingernail slot on the s-pen.

Could this case possibly fit the samsung galaxy e 9.6 sm-t560?

It probably would, the issue I would be worried with are the openings for the port and the camera window. I am not familiar with the galaxy tablet and it’s input areas but the construction of this cover may not be suitable to access the different ports on the tablet.
