I have used this mostly for trimming briskets and carving cooked roasts, where it has performed flawlessly. I have not needed to sharpen it yet but I do hone it on leather every now an then to ensure that nothing is sticking on the blade. One drawback of carbon steel is that it rusts really quickly, so ensure that after each use you wash it by hand and dry it with a cloth.
