Carbe Diem low-carb pasta has honestly changed pasta for me. The fettuccine is my absolute favorite. I was never even a big fettuccine fan before, but this one has such a light, fluffy texture compared to regular boxed pasta. It actually reminds me of the refrigerated pasta you buy fresh at the store. Not quite like handmade restaurant pasta, but very close to that fresh refrigerated style. It is noticeably lighter than traditional boxed pasta, and once I started eating Carbe Diem, it became very hard to go back to regular pasta.I mostly live a keto lifestyle, so this allows me to enjoy pasta without the guilt. My only wish is that the expiration dates were a little farther out. Since I do not eat large portions at a time, I like to keep some on hand, and longer dates would be helpful.For anyone who has texture concerns, here is what worked for me. Do not cook it as long as the box says. I believe the time listed was around 17 minutes, but I start testing it around 10 minutes. For me, 10-11 minutes at a full boil is perfect. If you cook it the full time, it can get way too soft. Just test it early and adjust. It cooks faster than you think. And trust me i do not like al-dente pasta i like it fully cooked soft and not mushy!After draining, I lightly toss it with a little butter or olive oil. I prefer butter because it adds flavor while keeping the noodles separated. They actually do not stick much, but a little fat helps.The biggest tip I can give is about sauces and casseroles. This pasta is best when you prepare only what you plan to eat right away. If you mix the entire batch with sauce and let it sit for a long time, especially in casseroles or mac and cheese, the texture can start to change. It does not hold sauce the same way traditional pasta does over long periods. When sauce sits on it too long, it can break down and sort of disintegrate or get just plain wonky.Now I simply butter the plain pasta after cooking, store it separately, and only mix a portion with sauce when I am ready to eat. It comes out perfect every time. If you want to make baked dishes, I recommend making smaller portions that will be eaten the same day.Also, my kids, who I assure you are just as picky as yours, did not even notice the swap. I will not say they raved about it, but they did not question it at all, and that is a huge win in my house.Overall, this pasta is phenomenal. It tastes great, feels lighter, and truly satisfies a pasta craving without the carb overload. I actually prefer it to regular boxed pasta now. If you cook it properly and use it thoughtfully, it is a fantastic low-carb option.

These are good
I was rather suprised that they are REALLY good. Cook time was longer then directions. I did cook longer then recommend to get them how we like them. They are a little pricey fir pasta but on occation they will hit the spot. They dudnt raise my sugar like regular pasta.
