My first experience with ancho peppers were from a label with a woman's name and a carrot in the middle of her name. Those peppers were very dry and brittle and I was disappointed that I couldn't detect the raisiny scent people talk about elsewhere. I rehydrated them, and upon tasting the rehydrating water and finding it very bitter. decided to use fresh water to puree them. Even so, the peppers still had a very bitter flavor.I decided to try these peppers and they are a lot more pliable, and yes, they do have that raisiny scent. I decided to do a test batch and after rehydrating, the water did have a sublte bitter flavor, so I pureed them with fresh water and other additions and the flavor was excellent. Wondering what to do with the test batch, I decided to make some chili, and the only tomato ingredient I added was a small can of tomato sauce. Best chili I made, even if it wouldn't win a chili contest. It's what we like that counts.

A very nice bag of dried chilies. They are not brittle, perfectly dried. Nice deep color. Mild sweet heat. Gave the dish a wonderful sweet, chocolate note, fruity hint. They really added to the dish. These were perfect.

These are great for making authentic mexican dishes. Not too spicy, condition of product is excellent, and dehydrated perfectly. Highly recommend this if you need dried chiles.
