Very good low-carb noodle option.
These are probably the best low-carb alternative noodles I have tried. Konjac tends to be a decent option but it's very hard to fry them well enough to get the texture right. Kelp is way too tough, almost crunchy, with not a pleasant flavor. Veggie noodles are always way too soggy. Egg white noodles are also way too soft. These take some work. Eight minutes to boil them in water (with about a tablespoon of salt) but they taste like real noodles and texture-wise they're quite similar. Without doing independent chemical analysis to determine if the nutrition facts are accurate, I'm willing to say these are quite good as a low-carb option. It would be nice if there were a bit more of them in a package, but they're about 85% of the way to a perfect single serving.

Follow instructions and they have great flavor and texture. Nearly identical to regular ramen!
I was really apprehensive about these. So many times the low carb items are so disappointing in texture and flavor. I'm happy to say that these are an exception! I followed the instructions exactly. It does take an extra step or two. But it was completely worth it! The flavor and texture was nearly identical to regular ramen noodles in my ramen soup! These are a bit pricier, of course, than regular ramen but for the low carb, low sodium aspect, I'll keep buying them. I'm going to try them stir fried and some other cooking methods as well but I can tell you that for ramen soup, which is how I eat them 95% of the time, these were a definite win! The serving size was perfect for a nice bowl of soup. They only take about 8 minutes to cook. Then you strain them and rinse them in cold water. You put them in your ramen soup at the same time that you would normally put in the dried noodles. It is a separate step but it wasn't much of an inconvenience. I use dehydrated vegetables that take a little time to rehydrate anyway so I just prepared these noodles while my veggies were rehydrating in my ramen pot. They were not mushy at all and soaked up the flavor of the developed broth really nicely. These are a win!

Good for blood sugar and keto.
I’m a type 2 diabetic and have following a low-carb/keto diet to control blood sugar. My A1C hovers a 10th of a point or 2 around 6.0 for the past 4-5 years. In frequently I like to “splurge” on keto branded treats: bars, breads, pasta, etc. many of these are blood sugar spiking trash (looking at you Pete’s Pasta). These noodles might give me a rounded, modest rise of 20-40 points in blood glucose for 90 minutes or so. Completely acceptable for an indulgence that won’t make me feel like crap. Stayed in ketosis. I will order more in a couple months when needed.

RIP OFF!!!!!
I bought these because I saw 70 calories a serving and I thought that would be good to lose weight. HOWEVER, the way they tell you the calories is highly DECEPTIVE! You get 6 packets of pasta, with each pack being a rather small, but acceptable serving size. BUT, they claim a "serving" is HALF the package=70 calories. That is a wildly small amount. So to anyone reasonable 1 packet=1 serving -140 calories! Not great for the price! PASS!

LOW CARB MIRACLE
OK. How to begin? Ramen Noodles are notorious for being HIGH CARB. An entire day of carbs is about 60 grams. I PORK over 60 grams, which is the approximate carb content of one Ramen noodle package or bowl (80 grams)? If you've taken the journey that I have, you've tried "low carb' noodles that cook up to a "nice" slime consistency? Oh, FRIENDS, these sweet things hold their shape and are, AWESOME. The directions say to use one cup of water and boil noodles for 8 minutes. My water pretty much disappeared before I put the noodles in, so I added more water (isn't EVERY new dish (bowl), a "cooking adventure")? I cut up some roast chicken and (I hope I'm not breaking some "review rules, nah, don't care). AND, I added a newly purchased Jayuss Chicken Ramen Seasoning to make Ramen broth. WOW! GREAT combo. Yes, the noodles aren't cheap, but 4 NET CARBS? SO WORTH IT. (The Jayuss has two carbs, and from the 10.58 oz package (BARGAIN!) a teaspoon for the whole bowl will do ya, off the charts, GOOD! The BAMI noodles have directions for Ramen AND Stir Fry, what's not to love there? Ok, people, as they say in Texas (where we lived for 18 years, and, God Bless it), 'GET YA SOME!" You KNOW you WANT NOODLES, right?
