It says "independant manual controls"...why can you not regulate the temperature?

The constant temperature guarantees all aspects of keep warm, plus the control distance is mainly for the top layer. If it is close to the top layer, such as baked cheese, the better the effect, but if to regulate temperature high, then the whole food is baked, you can't get the taste of the food you want.
