Grown in the rich soils of the national protected L'Albufera Park of Valencia, both of these short-grain rices make the perfect ingredient for paella, arroz and risotto. Their high absorption rates (Bomba absorbs one-third more water than the traditional) allows them to soak up and hold the abundance of flavors in all of your favorite rice dishes. To ensure freshness and the highest quality final product, our Matiz rices are packed in a sturdy cloth sack that allows the rice to breathe. **Q: Label say "paella rice" but what kind of rice is it?  is it bomba rice?**
A: It is paella rice, but it is not bomba. This same brand does carry bomba. I think it's in a blue label, and it is clearly marked bomba.

**Q: I have a bag from matiz that says espana and one that says valenciano. are they the same?**
A: Yes they are the same. Matiz is going through a rebranding strategy across their entire line. They are still the same products you've grown to love, it's just the regions will be eliminated from the packaging.

**Q: How much broth for 5 cups of paella rice?**
A: I use an 8qt Dutch oven with 1 1/2 cups rice and around 3-4 cups of broth plus a can of diced tomatoes that is not drained. It’s a little on the wet side so it’s cook’s preference but around 1-2 cups of broth per cup of rice is traditional

This is the only rice we buy for our annual Paella family dinner. It is so good. A full bag is what we use and the short grain nature is what Paella is all about. So tender, so absorptive, sooo goood! Won’t look anywhere else for Paella rice!
