I have purchased this many times! The best flour you can bake with.All of our organic flours suck in Canada in comparison to this!High standards for farming practices, clean healthy soil, no fake vitamins or pesticides, also as mentioned a few times the wheat is different in general then what is grown in North America so the gluten in this flour is naturally lowers than ours. I feel better eating bread and pancakes with this purchase! Vive la France 🇫🇷

Fantastic Flour
The flour in my opinion is one of the best if you’re looking for easily digestible flour as well as being able to hold up close to modern bread. Simply due to its nature, it naturally doesn’t rise quite as much but I would say round about to 80% of standard bread flour but in what it gives up in rise it makes up for in taste and ability to be easily digested. It is easy to work with, but truly does benefit from a slight decrease in hydration as it does have a slightly lower gluten index. Overall it is my go to flour for when I choose to bake. While I have heard complaints about freshness and preservation upon arrival I personally have not experienced any reason for complaint yet and I have ordered numerous times.

Quality Control is HORRIBLE
Ive used this flour for the last year or two with no problems, but the last two orders have been HORRIBLE. Two of the bags had water marks on them and the flour was clumpy. Other bags seemed fine, but the flour was still VERY clumpy. I dont know what happened, but Im not ordering anymore. Im now searching for a different brand of French flour.
