Much smaller wood chips... that's good!!!
I've been smoking for many years with an offset using lump charcoal and large hickory chunks and chips. I loved it. Now being retired I've moved to a more manageable pellet smoker. It's been a challenge to get the flavor I had before. I've tried wood chips in a smoke tube but the ash and keeping the chips smoking has been a challenge. When I saw these chips I noticed they looked to be mostly much smaller chips versus other brands. I've been intrigued with the bourbon flavor anyway so I gave this brand a try. I was very pleased at the outset when I got the bag because indeed they were mostly small chips, 1/4" to 1/2" in size. Why is that important? When you try putting chips 1" or longer in a smoke tube there is lots of air between the chips and it's hard to get a good, continuous smoke. These small chips make the packing more dense. I mixed some pellets that I was cooking with in with the chips (to be sure they continued to burn) and loaded them into the tube. That produced a good smoke with manageable ash. I do believe I picked up additional positive smoke flavor with these bourbon chips but I'll be trying it on other cooks to be sure. Overall, I'm pleased with the results of this product.

Nailed it
If you want a subtle fruity yet strong bourbon flavor profile instead of just "smoky". This is it. Tried some with 2 different wing recipes and last night on some bone in pork steaks. The pork took the flavor well. Will def use with all my pork from here on out when smoking or even while grilling

Nice touch to my grilling experience. The hint of smoked flavor to the food was a hit. Just heat the chips until smoking and then cook on low heat to allow the smoke to infuse with the meat.

Disappointing
We bought this to go in our little smoker box for our propane grill. It created a lot of visible smoke but very little smoke flavor. Maybe it works better in an actual stand alone smoker. It was also more expensive than other chips but again with less performance for how we used the chips to smoke our food.
