It's like I'm back in New Mexico...
Having grown up in New Mexico, both and red and green chile became staples--it went on everything, and you didn't really think about it. But now I'm going through withdrawals.Being on the other side of the country, words like "grits," "fatback," "hushpuppies," and "collard" have replaced "red," "green," "christmas" (the term used for both red AND green chile on your food), and my personal favorite, "smothered." As one might imagine, New Mexico green chile (especially Hatch) is very difficult to come by in these here parts...but thanks to ZIA and Amazon, I can once again revisit the unique, spicy flavor of my hometown with this roasted Hatch green chile. And speaking of the spice level, ZIA's 'hot' variety does bring the heat. It's got a nice kick to it, and a little goes a long way. If you prefer to taste the _flavor_ of the chile, without your tastebuds having to navigate through the burn, then I recommend the 'medium' level.I gave 4 out of 5 stars for price/value because, well, 13 bucks is a lot of money for a jar of roasted vegetable. But, it's either that, or several hundred for an airline ticket, so I consider this a once-every-so-often treat...and really, true New Mexico Hatch green chile _is_ a treat, to be savored and appreciated.(The image that accompanies this review is of scrambled eggs, bacon, and cheese, with the ZIA green chile stirred in at the end, about a minute before taking it off the heat. It's an amazing way to start a morning.)

Just like I remember.
I lived in Colorado for 21 years, where I became accustomed to burritos smothered in or including green chili. I moved away in 2020 and have been missing those burritos and annoyed at how dry breakfast burritos are everywhere else. I finally decided to try making my own. I ordered these chiles and they fit the bill perfectly. Using these in a very basic recipe, the chili came out medium spicy with the occasional bite of hot. Definitely recommend, the flavor took me right back to Burrito Fridays at work in Denver.
