does the plant just sit in the medium and water below with just the air stones? how does the system work?

In a deep water culture system, the plant is placed in the growing medium, and the roots are allowed to grow below the container and are submersed in the nutrient rich, oxygenated (by the air pump and air stones) water below. The root system pulls the nutrients and oxygen it needs by being submersed in the reservoir of water. This is a basic explanation, but hopefully it helps :)

How many gallons of water do you put in a 5 gallon bucket for growing?

About 3.5 gallons will put you just above the bottom of net pots.

How would i draw a sample from this to test ppm and ph? could i just turn the water height valve upside down and use as a drain spout?

No need to get super technical. Just pull a sample out with a cup and test it.. But honestly, you need to change ALL the water every two weeks anyway, so just set it at 5.8 AFTER you mix your nutrients in it, put the lid/plant back on the reservoir and leave it alone for the next two weeks.. The water that is.. Rain mist the plants with a water bottle daily (I put a light nutrient mix in mine) and you're golden.. Trust me

What size light do you recommend for a grow of this size?

Small - medium plants 600w, large plants 1000w. With either, use a reflective grow tent or hang reflective grow material on walls.
