Hi thank you for your question. The bovine we source is from non-gmo, non anti biotic grass fed pastured raised cattle. Since the highest quality truly grass fed bovine (we believe) comes from Brazil, Brazil banned the use of DDT so have found unique solutions to raising grass fed cattle. While the farms we source our bovine from have higher standards then many organic farms in the US, we have yet to find any Brazilian cattle farm which wants to pay the USDA fee's just to get the organic certification. These farmers are family owned farms who believe in raising high quality cattle with high standards.
