Great Stuff
This is my third or fourth purchase of large bags of xylitol. MUCH cheaper than buying small bags in a store, when you can find it. What I like about it is that it's made from birch, tastes just like sugar, but has 36% fewer calories, is a 7 on the glycemic scale (sugar is 100), reduces the growth of plaque-forming bacteria on the teeth, increases saliva, and thus reduces the formation of plaque and cavities. It's somewhat more expensive (not sure how much more), but it's taken me maybe 15-20 years to use up maybe 35 pounds of the stuff, mostly for coffee. This bag is as good as the other brands I've bought.

Best Sugar Substitute Ever, With One Caveat
I became very interested in Xylitol after hearing and reading about it's scientifically proven ability to restore teeth and bones over time. Micro-Ingredients seemed to have a good rep as a company and had the best overall price as well. Xylitol has 40% of the calories of sugar, is plant based, and has no impact on insulin levels As a sweetener, Xylitol can replace sugar at a 1 to 1 ratio, no fancy math required. I've noticed ZERO difference in taste between it and sugar also. Even Stevia has a slight aftertaste to me, but not Xylitol. My homemade Korean Bulgogi sauce turned out perfect using it. Xylitol dissolves easily in water as well, more so than sugar or other substitutes. I've read that it doesn't caramelize well however, so that specific baking goal is probably out. The only real drawback to Xylitol is that ingested in large quantities, it can have a "laxative effect". Per guidelines I've read, that means 50 grams or more. While that's what would be in a single serve bottle of Coke, you'd have to eat a whole lot of cookies, cake or pie made with Xylitol to hit that limit.

Best sugar substitute ever
Finally found the best sugar substitute ever. Love xylitol it’s natural made from birch. I wanted to cut back on sugar because sugar is not my friend. I get stiff joints and stomach issues from it. However I can use the Xylitol with NO issues. It keeps my sugar levels down which helps me because I am pre diabetic. I use it in place of sugar in all my recipes including baking. Love that it tastes great has the same consistency as sugar. I have reordered it several times about every three to four months. It’s my favorite sugar substitutes. I recommend it to anyone who has sugar issues.

Great taste, all natural
The best sugar substitute I ever tried. It’s all natural, and has no aftertaste. I use it in equal amounts I would sugar. The only drawback (and it’s minor) is it doesn’t dissolve in cold liquids. For fresh lemonade or iced tea, for example, I just make a concentrated batch of simple syrup then chill it for use. The hot water dissolves the granules. Superior to stevia.
