Is this safe on plastic and metal?

Yes. I've had it on both plastic and metal parts of my HOTAS for 6 months now, and it hasn't harmed either surface at all. It does what it was designed to do, which is provide a steady smooth friction effect as one part glides over the other. Prior to applying this, friction made the two touching parts moving in a jerky fashion, as the two parts caught, then broke free and slipped. This grease allows the two parts to slide smoothly through their entire movement range. The thickness of the grease means the slide is under control, slow but constant. But be sure you are looking for grease with that specific effect; if you expect it to decrease friction as a lubricant you should look for a different type of product.

Has anyone used this on volume knob potentiometers? Is this a good consistency, or should i go with a lighter nyogel like 795A?

I use it in a tonearm lifter. Good consistency. For a potentiometer go with the 795A.

Is this good for flight stick gimbal lubrication as well? Or is the dampening effect going to negatively impact that type of use?

Many people who buy this lubricant use it on joysticks, and they really like it. Regarding your specific application, I can’t offer any guidance since it’s very subjective. Feel free to give it try and if it doesn’t work out, please return it for a full refund. You may also want to check out Nye’s Rheolube 362HB, which is not nearly as thick as 767A.
