Excellent knife!
This knife is everything I expected and then some. It arrived quickly and the packaging was excellent...suitable to give as a gift! It is the sharpest knife I have. It is a bit on the light side but tbe grip is perfect and it fitswonderfully in my hand. The handle is beautiful and the quality is excellent. I think it will be worth every penny I spent!

Oh the quality and beauty of this knife!
I am an amateur and knife collector. At unboxing this knife will wow you for the quality of the materials, the weight and balance of the knife, and for its sharpness, out of the box! I am very pleased with my purchase. This could be a beautiful gift to a cook, a foodie, or an amateur and collector of knives.

An amazing work of art!! Incredible!!!
Beautifully crafted, well balanced and everything you would expect from a Miyabi!!! As a professional chef my knives are an important part of my life. That being the case I am also a collector of quality knives. This one immediately fit great in my hand. The blade was perfectly straight and the flow of the curvature was comfortable when performing all of the standard cuts. From rocker chopping, mincing herbs and dicing onions it just felt good. Like I had been using it for years. Nothing short of incredible.

Best value Japanese knife
This knife is exceptional. I don't think there's a better value from any of the major manufacturers. Miyabi's edge is 7/10 out of the box. The knife has good geometry and is well finished on the spine and in the choil. The distal taper isn't extreme, meaning I don't worry about the point doing fine work with the point. The edge profile is perfect for professional or home use. Particularly for someone used to a Western profile, this is a good entry point. The copy I received had excellent fit and finish. With the integral bolster, the balance point on mine is just in front of the bolster, not as far forward as a lighter weight gyuto. I actually think this makes it easier to work with and to utilize the entire edge. My one comment is about the esthetics โ to me, this is a perfectly elegant and functional knife but I don't know why they sandblast the blade. It doesn't add anything to the functionality. Its simplicity is what sets this apart from other Miyabis which typically feature demascus finishes. The rather pointless sandblasted finish takes away from what would otherwise be a timeless design, to me. I don't see it helping with food release. Aside from that, I think this is where the search for a Japanese gyuto should end for most people. This is an exceptional knife, better than similarly priced knives. Superior to Tojiro, Mac, Global in the similar price range.

Some Quality Issue
It's slightly handle-heavy, nice, and sharp, but the blade is not straight. The handle finish is not 100%. The package is poor for this price point. The overall feel is okay, although it does not fit my style. It weighs 181 gr.

Excellent knife
Wonderfully sharp and crafted with an extreme attention to detail. The weight is perfect, I love how balanced it is. While good for regular food preparation, I believe a knife like this is best for cuts that greatly affect the presentation of a dish. Note: has been good for sushi

Sharp, good thin grind, but not symmetric and blade bends left
The grind on the blade is relatively good and has a good taper to the tip for over all thin as a Tojiro. Overall its fit and finish is comparable to my Tojiros but sometimes I prefer this handle. Itโs a little heavier and the balance is slightly more toward the handle than a DP/classic and as much as I can discern it performs as well. I would give 5 stars if the bolster grind were symmetric and if the blade were not bent and if it was centered at the bolster. I am hopeful I can bend the blade straight without breaking it and I can live with the asymmetric bolster transition and the blade being slightly right of center but I expect more competitive quality control at any price point. The edge is very sharp out of box.
