what steel is this made out of? Japanese high carbon means nothing.

The ad says in the description of the knives is that that they are made of " high carbon stainless steel" - other than that info nothing else is provided. The set is a good quality, and we are still using the set that I picked up for a good price. So far, all the knives are still extremely sharp, and the handles are holding up with no problems.
