Yes, I have allergies of Nickel and that is one of the reasons I bought these.

how does the earring latch?

The latch is on a hinge. The pin/post, not sure of the proper terminology goes through a small hole. I love it. No separate back to lose. I like it more than the type that snaps into place because it can become loose over time. Very comfortable. No one would ever suspect the price paid for them. I highly recommend them.

Will these turn ears green?

I have had these earrings for over a year, wore a pair everyday and have never had an issue with turning, fading or allergic reactions!
