Will these rails fit a Dell R710?

You'll probably need rails with wider wings on them to support from the bottom.

They're called 1U rails, but would 5U equipment properly fit? Seems the front screws securing rails, might stand proud and interfere.

As long as it's not too heavy, it should physically hold it. The screws don't stick out too much, so you should be able to secure your equipment unless you have really short screws. But the standard M6 screws that come with most racks should be long enough.

Does this product include cage nuts for mounting to a square-hole rack?

No this does not come with cage nuts but it does not need them the rails but up against the inside of the post and the screws than slide threw the square hole and thread in to the shelf kit.
