Holds an edge well
I'm a knife guy and the better than average chef. As you can see by my magnets, 95% of my knives are 'WÜSTHOF CLASSIC', so quality steel is important to me. That smaller sushi knife I have (top left) has served me well for many years, but its not quite long enough for larger blocks of fish and doesn't hold an edge well. I didn't want to spend hundreds of dollars on another sushi knife, but this one looked like it was a good deal and above average quality. I'm glad I took the chance! I've had it for right around a year now, and have found that it holds its edge very well. The handle is very comfortable, it's balanced well and just the right weight. Being a sushi knife, it's a 'single bevel' knife. (meaning one side is flat and the other side is angled to the edge) Having a 10.5 inch blade (16 inches overall), it might be a tad too long for the average user. But anybody who makes their own sushi knows that a single slice from heel to point is the best way to cut fish, so there's plenty of room with this knife. No need to 'saw' back and forth.
