Can you slice soft meats with this?

Yes. I sliced a boneless half ham from Walmart with this. It's good for sliceing meat for sandwiches and a meat, cheese and crackers tray. Pepperoni, etc. You can also slice veggies. Mushrooms and other items too.

What blade and setting would you use to dice an onion? It seems everything I’ve tried just turns the onion to mush.

I have not been able to use any of the plastic knives. The closest thing to is to put the bottom blades up and use the regular straight knife it gets close to diced. You have to finish up by hand.

Can this handle smaller things such as slicing shallots, radishes or garlic?

It has a cut glove so yes it can it's very sharp but if you want to use the holder it will not cut those.

How do you wash the glove?

I don't really use the glove, but I believe you can machine wash it if you want to.
