Yes, that should not be any problem. Certainly regarding stability. Regarding heat transfer if you are worried about this, I seriously doubt about that as well. (I use the metal bar for hanging on the side and never had an issue)

Do you remove the bottom grill to put the charcoal in or use the bottom grill as a layer to support the charcoal

You can use the bottom wire for the charcoal, it helps the air to circulate.

What is the weight and dimensions of the packaged box please? I'm hoping to put it in a suitcase in a hold!

It's been a year since I bought my BBQ so dimensions - not so sure so if u remove from box maybe fits a large suitcase- weight not an issue . Good luck
