Not recommended for straw bales as too easily contaminated. Straw must be bagged and then pasterized to kill contaminants. Then introduce sawdust grown mycillia to straw. Keep in a sterile environment to prevent contamination n By other spores.

how can they be started in winter months ?

They should not be done during the freezing season. They need to be inoculated right after winter to harvest the following spring.
