Does this pillow really help with neck pain? I've tried so many pillows and nothing works.

Yes. Unlike regular buckwheat pillows, it has three separate compartments that keep hulls even. The middle cradles your head, the upper/lower support neck and shoulders, and each zone can be adjusted individually for loft.

How do you adjust the height? I'm a side sleeper and need more loft than a back sleeper.

The buckwheat pillow has zipper for adjusting fill.Side sleepers: keep more in upper/lower zones to deepen neck/shoulder cradle and fill the ear-to-shoulder gap. Back sleepers: reduce middle slightly to prevent forward tilt.
