The comment about rice added to the product to keep it in powder form acts the same as an absorber. Most people still put rice in their salt shakers that sits out. I would recommend if you want to store this long term is to vacuum seal it in mason jars and place it in a darken place. I would use 1/2 pint or pint size jars so you are only opening a small amount when needed. Vacuum sealing mylar bag or food saver bags and placing them in a tote or bucket in another means in which to keep long term. Just make sure sun light does not reach it to degrade it.. **Q: Is there a guarantee that once opened and sealed correctly after each use, it will not cake up into one solid block** A: I know EXACTLY what you're talking about. I've purchased NUMEROUS brands of tomato powder, and many of them clumped up to the point that even throwing the clumps in a food processor / blender didn't help break them up any more.The Harmony House tomato powder has a few features that make it WAY more impervious to clumping. First, it comes in a jar, so, if sealed tightly and kept at a controlled room temperature, it shouldn't clump. Secondly, they include a small (inedible) freshness packet in the jar. It's there to absorb the moisture so that the tomato powder doesn't absorb it (and clump.) I suggest leaving that packet in the jar for as long as you have product in the jar as it will help reduce the clumping.After having mine for about 9 months, I can attest that there was SOME CLUMPING, but overall, it was VERY MINIMAL. (Around 1/8" or 1 cm sized clumps, if that gives you any idea.) AND they were easy to break up just by shaking the jar. It takes up so much less room than bulky cans of tomato paste, sauce, or juice, and imparts a wonderful, rich tomato flavor to whatever you add it to. I add it directly to soups and stews with plenty of liquid already in them, or mix up some paste or sauce for a wonderful spaghetti sauce or dip for cheese bread. It keeps well, sealed in the jar. It does eventually cake up a bit, after a few months, but giving it a good shake loosens it back up fairly well or just dissolving a chunk in hot water works too.
