Your cream of tartar says 79.3g carbohydrates per 100g, other products say they are 62g and Google says cream of tartar is 62g, why the difference?

Hi Laura, It has a shelf date of 3 years, but as it is as well a natural preservative, if kept in a cool and dry place, you can use it beyond its shelf date, mainly because it does not lose properties. We maintain at the factory 1 lot of cream of tartar from 1998 and we keep analyzing it every year and as it is kept in a cool and dry place, it could also be consumed without problems. Of course, we do not sell this lot from 1998 and it is kept in order to analyze it every year and understand how it keeps its properties. Hope this can help.
