My invalid wife's caregiver is from Venezuela, and she introduced my wife and myself to the pleasure of eating arepas... it's a bit like an English muffin, but made from a special pre-cooked white corn meal flour, grilled on a griddle, and cut open and typically stuffed with scrambled eggs and cheese. The caregiver makes these every Tuesday for us, and it's a great treat. Of course, it helps to have the right flour... in fact, it's essential, and P.A.N. is what is needed. It's not easy to find in local supermarkets unless they cater to a significant Latin population... but it's very easy, and quite inexpensive, to order it from Amazon. I usually order 3 or 4 bags at a time, and fortunately, if I run out, it's often a next day delivery.
