Great white#1 workmanship
Very nice for the price. After a little work and cleaning up the edges and putting on japanese natural stones it's on par with higher end white #1 knifes. Good heat treatment around 61 Rockwell hardness. Small over grind but was able to remove it on stones.Do not buy if not you do not know how to care for high carbon reactive steel. It will rust badly if abused and never put it in the dishwasher. It must be cleaned and dried after it is used, and wiped in-between cuts on highly acidic fruits.

This knife is reliable . I have been worked sushi industry about 30 years .this knife ok more than ok compare money to quality.

Blade Dented at the 2nd usage on a bamboo cutting board.
I don't think the knife is good quality , dispute been a white Steel # 1 or 2. I will not recommend as to buy.
