Is it undutched Chocolate?

All of our cacao products are non-alkalized, meaning they are not Dutch processed. Alkalization destroys many of the valuable nutrients in cacao, like flavanols and antioxidants, which is why we choose to forego this processing step. -Kali @ Navitas Organics

Was this included / tested in the recent Consumer Reports article, testing that found significant levels of cadmium and lead in many brands dark choco

Happily, Cacao Butter does not contain detectable amounts of heavy metals. When cacao beans are ground into a paste and then cold pressed, the result is cacao butter and cacao powder. Compounds like heavy metals remain bound in the plant fibers that are part of the cacao powder. -Kali @ Navitas Organics

Do the cacao wafers (not the cacao butter wafers) have cacao butter in them, or has it been removed (like in the powder)?

Yes! Our Cacao Wafers are made by milling the whole cacao bean into a paste that is then formed into wafers. It includes the solids (cacao powder) and the fats (cacao butter) in their natural ratio. The wafers are perfect for baking projects, hot cocoa drinks, melting & more. -Kali @ Navitas Organics

Yes, the only ingredient is organic cacao.
