Great for so many pasta dishes
The cut I received was not overly fatty, but it does need some fat to be useful in some dishes as your other ingredients need to be cooked in the rendered fat. It's easy to dice up and render down to use. Very flavorful and adds just the right amount of pork flavor to many dishes, especially pasta. Not easy to find this where I live, so this was exactly what I wanted. I am satisfied with this purchase and will probably order again when I need this ingredient. Not exactly a "health food", but the flavor it adds is worth it!
