Why does this sweetener show red (high) for sugars in the nutritional information?

It is a mistake. Sucralose is not related to sugar at all. This is a good sugar replacement.

Are these in date, as morrisons have stopped selling them quite a while ago

Don't know if they are in date but Morrisons are most definitely still selling them. And I really doubt if out of date stuff is being sold here.
