Thank you!** A: They are supposed to be mushy enough to be able to shred with a fork like crab meat and solid enough to cut into round shape disks like scallops! They are usually all the same-ish size but you'll get a few that are bigger or smaller. I named 2 seafood names for reference but I do use then as imitation seafood and they are great!
