Q: What is the blade angle and Rockwell hardness on these knives?

Ask Wusthof classic knives are true 58 degrees Rockwell and 14 degrees for every blade except the three Japanese style blades we make - Nakiri,Santoku, and Chai Doa. Those three blades only are 10 degrees each side.Bob at my kitchen center

Q: Can I add a filet knife?

There should be plenty of room in the block. We love these knives, and can do plenty with what is there.

Had that happen to me, turns out the first time I accidentally bought their “gourmet” line which I hated and was cheaper in price and quality
