The reason I cancelled is because when 2 inputs go in, both go very quiet. One in, its fine, so whats up with this connector ?

Could be many reasons, but more than likely a signal error, not enough power to run 2 speakers

can i plug this into a zoom h6 with the female ends able to recieve 2 headphones to listen to live podcast recording?

Can I plug my guitar lead and a microphone into the female connectors and the male connector into an amp?

I just use this to attach headphones (with two ends) to the computer (which has two sockets). I don't know how it would function as you have suggested. Not sure I would want to risk my amp trying, to be honest.
