Do these fit the optic racks that have the silver optics normally as I want to convert to these?

I can't recommend an alcoholic drink but this dispenser would work with any bottle of spirits and ensures that you can stick to your unit amount without guessing. 25ml is the normal single shot that you would get in a pub/club. Good fit, no leaks and easy to clean.

Can you operate these by hand or do they have to be fitted to a wall mount as others have suggested? Thanks in advance.

yes they can be used by hand, all you do is put it in the bottle and when you want to use it, turn the bottle upside down wait for the optic to fill and press the optic onto the top of your glass instead of pushing your glass onto the optic, simple as that.
