How thick of wire can be used effectively to make clamps with

I have .032 and .041 to use, I've seen other comments of others using .625. Personally I would keep it use the smaller wire with the small tool by keeping it at or under .050.

Question 2

Does anyone have any idea what types of hose pressure the clamps this makes can handle? For example, what about pneumatic hose, hydraulic hose or PEX?

I use a homemade version of this tool (made from a turnbuckle, screw eye and wing nut) to make wire hose clamps. I have used them on shop air hoses, water hoses, vacuum pump hoses. Hoses of Rubber, Vinyl, Canvas, Silicone. These wire clamps are very low profile and durable if the ends are bent inward enough. Easy on the hands, nothing to snag on. I have used this on up to 4" hose (dryer vent). 
I think any hose over 3/4"  or so that's pressured over 250 psi or so should have specialized connectors though I would use this method for an emergency repair at higher pressures and watch it closely until a proper connection could be made. Some hose types work better with a wire clamp than others. Larger diameter wire can be tightened more before cutting into the hose. You want to compress the hose without the wire cutting into it. Some hose material cuts easier and benefits from larger wire. Sometimes a little lubrication while tightening keeps the wire tension even on all the wraps. 
I stick to steel and stainless steel wire mostly, sometimes copper or brass though they stretch easier and won't go as tight. I suppose you could use aluminum but it can be finicky to tension and crimp and doesn't like being bent and stretched at the same time.
