We've learned to let it heat on high for 15-20 minutes, then turn it down just below the two red ticks on the heat range. In this setting, pizzas cook in around two minutes or so. Turning the pizza about a quarter turn every 30 seconds is necessary. Once the pizza is done and removed, we turn the oven back to high until the next pizza goes in, then back just below the two red tick marks. This method seems to keep the stone hot enough to cook the crust well without burning the toppings too quickly. Making the pizzas on a well-dusted wooden peel keeps them from sticking when sliding into the oven. A smaller 8" turning peel helps a lot with rotating the pizza, and a 12" metal peel makes pizza removal from the oven quick and easy.
