You can find the nutritional information at Amazon web page: https://www.amazon.co.uk/dp/B01E5OT200?ref_=pe_747761_41376721_dpLink also at: https://www.beneo.com/ingredients/human-nutrition/functional-fibres/inulin

Hi If we are going to use it for baking, what would be the appropriate amount ?

Sorry, I haven't any idea about using it for baking... I was told to take 12g daily, about 3 teaspoons, to keep my gut functioning well.

Does this dissolve well in liquid?

It dissolves well in hot water - approaching boiling. It tastes fairly sweet so can make a base for a warm drink. I have also mixed it in with low calorie diet drinks but, I have sprinkled it on top of the other powder and mixed it vigorously. Putting it straight in the skimmed milk makes it form into gooey lumps.
