Hello , Can any one tell me if these are short rise ( mea; between crouch and waistband ) need 8.5 to 9.0" ?

They are not short rise but they are kind of low. I actually researched this exact question when I made my purchase and the 559 are the ones that have the greatest room in the posterior. All the others are medium.

Are these shrink to fit?

There is no shrink after washing.

stretch 501s, the Rose and Walsh, are they stretchy or i received fake ones? bought both and they don't stretch at all, feel like normal non stretch

Some washes are now offered in “stretch” you can tell which are and which are not by looking at the materials used. If it lists 100% Cotton then they are NOT stretch. If it lists 99% Cotton, 1% Elastane then they are the stretch denim variant.
