Hi on a charcoal barbecue, do you just chuck a hand full over the hot coal?

Its best to soak the wood chips in water for at least 30 minutes before putting them on. The idea is to get smoke from them and if you put them on dry they will burn immediately without producing as much smoke. A handful is about the right quantity and yes it should only be used once the coals are properly lit.

Can you use these on a gas grill?

Yes you can, you will need a smoker box or make a foil pouch.

Can I use theses to flavour my still spirits

Yes but they won’t taste like brisket just wood not meat or smoke just wooden wood from wooden trees

Expensive.

I like the product. It gave a lovely mild flavour to my side of salmon, but I will look for an alternative as is a very small bag, and would make food expensive. I would recommend the product but not at this price.
